I've been craving for some pasta for awhile now. I didn't have much to work with in the fridge, but some chard, fresh organic carrots and a few veggies I picked up at the Farmers Market. I decided to make a Pesto Elbo pasta with the chard and organic carrots. To compliment the Pasta, I made some Multi-Grain toasts. This was the turn out! :)
Ingredients:
Whole Wheat Elbo Pasta
Organic Chard
Organic Baby Carrots
Vegan Parmesan Cheese (Galaxy brand)
Pesto: Basil, Canola Oil, Parmesan Cheese, Walnuts (if allergic to nuts, you can leave this ingredient out), Olive Oil, Garlic, Salt & Pepper (Blend to make sauce) or you can buy a store bought Pesto Sauce (already made)
Directions:
Boil Elbo Pasta til' Al Dente
Drain pasta, then put back in pot and cook with desired olive oil
Add Chard & Carrots
Stir in Pesto sauce
Season to taste (any of your favorite spices)
Top with parmesan cheese
Multi-Grain Toasts:
Bon Breads Multi-Grain bread (Fresh52 Farmers Market) Or ANY BREAD
Organic Vegan butter
Fresh ground pepper
Garlic powder
Sea salt
Lemon blend (Bloomin' Desert Herb Farm)
Shredded Parmesan
Directions:
Butter Bread
Add seasonings and top with parmesan
Bake at 350 for about 20 minutes (depending on how crispy you want them)
